Christmas Brunch Recipes!

The presents are wrapped, and under the tree.  The fire is burning and I am watching a Christmas Movie while drinking Hot chocolate!

ONLY IN MY DREAMS!

I am hunting for gifts I have hidden!  I did find some I hid last year! If I don't find them, the gifts are not equal and I will have to go shopping again!  The tape dispenser if not cooperating and the door bell keeps ringing - neighbors and friends bringing gifts.

I took a deep breath and realized how Blessed I am!

I am feeling Happy & Merry and Giving! So I thought I would share some Amazing recipes!  I had a Christmas Brunch with some very Special Friends who know how to Cook! 

If I am too late in sharing for Christmas, remember there is always New Year's Day!


It tastes as good as it looks!

Sour Cream & Chicken Quiche: ( 1 pie )
In a 9 “ pie crust layer the following:
1 generous cup of cooked chicken breast meat
¼ cup cooked onion that has been sauted
½ of a 4 oz. can of green diced chiles
¼ cup diced cooked bacon
Sprinkle ¼ tsp salt over pie
Then, sprinkle a generous ½ cup of shredded Swiss cheese
followed by ¼ cup shredded sharp cheddar cheese.
Pour over the top:
3 eggs beaten with 1/3 cup plus 2 Tbs. sour cream and 1/3 cup plus 2 Tbs. milk
Bake in a 400 degree oven for 20 min. Reduce temp to 350 and bake an additional
25 minutes or until knife inserted comes out clean.

 Christmas Salad

Spinach and ice burg lettuce
Cranberries and pomegranate seeds
Sprinkle on toasted slivered almonds and sesame seeds if desired.

Dressing:

¼ c. white wine vinegar, ¼ c. cider vinegar, ½ c. olive oil, 2 t. minced onion,
½ c. sugar or 2 packets sweetener, 1 Tbs. Poppy seeds

Orange Rolls

2 T. yeast in ¼ c. warm water
1 ¼ c. scalded milk
add ½ c. sugar
1 square butter
½ t. salt
3 eggs beaten
5- 5 ½ c. flour ( enough to roll a soft dough)

Let rise until double.
Divide in half and roll each into a rectangle
Spread filling: 1 C. sugar, 1 square softened butter and grated orange peel (zest)
from one orange.
Roll dough and slice. Place rolls in muffin tin or on cookie sheet.
Let rise.
Bake 375 for 10-12 minutes ( makes approx. 30 rolls)

 Carrot Pudding with Butter Rum Sauce

1 c. bread crumbs 1
1 c. grated carrots 1 tsp. cinnamon
1 c. grated potatoes ½ tsp. nutmeg
1 c. grated apples ½ tsp. cloves
1 c. raisins 1 tsp. salt
1 c. chopped nuts 1 tsp. baking soda ,combined with 2 T. water
1 c. flour 3 T. melted shortening
1 c.sugar

Combine bread crumbs, potatoes, carrots, apples, raisins and nuts. Sift together flour, sugar and spices. Add flour mixture to ingredients along with the baking soda, water and shortening. Combine all ingredients and blend well. Fill greased 48-ounce shortening can 2/3 full . Cover with foil. Steam in 2-3 inches of water in covered pan for 3 to 3 ½ hours. Top with Butter Rum Sauce.

Butter Rum Sauce:

4 T. brown sugar 3 T. cornstarch
2 c. water ¼ c. water
½ c. sugar 1 tsp. vanilla
¼ c. butter 1 tsp. rum flavoring

Combine brown sugar, water, sugar and butter in saucepan. Bring to a boil. Add cornstarch dissolved in the ¼ cup water. Cook one minute or until boiling and thickened. Add vanilla and rum flavoring. This is an old fashioned, delicious dessert. Perfect for the holidays. Yield: 6 to 8 servings.
