Dinner in a Pumpkin!

It is almost Halloween!  Hasn't this Holiday turned into a crazy fun one?  The decorations, the costumes, the parties!  Wow!!!!

We have a Halloween tradition - Dinner in a Pumpkin!
I am sure you have some fun ones too!





Dinner in A Pumpkin

1 small to medium pumpkin
1 onion, chopped ( I don't like this much onion, so I use less)
2 tablespoons vegetable oil
1-1/2 to 2 lbs. ground beef
2 tablespoons soy sauce
2 tablespoons brown sugar
1 (4-oz.) can sliced mushrooms, drained
1 (10-3/4-oz.) cream-of-chicken soup
1-1/2 cups cooked rice
1 (8-oz.) can sliced water chestnuts, drained
Cut off the top of the pumpkin and thoroughly clear out seeds and pulp. Paint a face on the front of the pumpkin with a permanent marking pen or acrylic paint. Preheat oven to 350. In a large skillet, saute onions in oil until tender. Add meat and brown. Drain drippings from skillet. Add soy sauce, brown sugar, mushrooms and soup. Simmer 10 minutes, stirring occasionally. Add cooked rice and water chestnuts. Spoon mixture into the cleaned pumpkin shell. Replace pumpkin top and place entire pumpkin with filling, on a baking sheet. Bake 1 hour or until inside meat of the pumpkin is tender. Serves 6

Peach Pie




Peach Pie


Cookie Crust

Mix the following in the pie dish:

1/2 c. butter softened
1 c. flour
1/4 c. sugar
pinch salt

Mix together and press lightly into pie plate. Bake at 375 for 10 minutes. (If you press it in to hard, it's hard to cut.) Cool.

Glaze

3 T. cornstarch
1 c. juice (whatever kind you like that's orange)
1/2 c. sugar
Bring to a boil and cool a bit.

Spread bottom of shell with 3 oz. or so of cream cheese sweetened with powdered sugar to keep crust from going soggy. Then slice peaches into pie plate. Then pour glaze over and refrigerate to set.

Tasty Tuesday: Jello Cake

Jello cake is a family favorite and one of our "go to" desserts. I have yet to meet someone who has tried this and didn't like it. It's light and fluffy and perfect for anytime of the year and with any kind of meal. 

Give it a try and let us know how you like it! 


1 white cake mix, baked according to pkg directions
1 large box raspberry or strawberry Jello
1 C boiling water
1 C cold water
1 8 oz tub of Cool Whip

Let cake cool completely. Poke holes in cake with a large fork, or end of a spoon. 

In a medium bowl, dissolve jello in hot water. Add cool water and stir well. Pour evenly over top of cake making sure to fill all holes. 

Refrigertate for 2 hours. Top with cool whip!

How to boil a perfect egg...

With Easter just around the corner, April 24th to be exact, there will be oodles of eggs being boiled!

This is how I make perfect egg:





1. Place eggs in the saucepan, it does not matter if it is 2 or 12 eggs, this way works. Just cover them with cold water, not too deep. Do NOT salt the water. Place on burner on HIGH heat.

 
2. Place on burner on HIGH heat. Once they start to boil turn on the timer to 3 minutes.


3. When the timer goes off, quickly take off the heat, put on the lid and reset the timer to 26 minutes.

 
4. When 26 minutes are up, take to sink and run cold water over them for about a minute, let them soak a bit to cool off. They will peel best if you set them in the refrigerator for about 1/2 to 1 hour, but you can eat them now!


5.  Never have gray yolks again!

Tasty Tuesday! Rhodes Orange Knot rolls

Orange Knots

12 Rhodes Texas size rolls, thawed but still cold

1 orange rind, grated

1/2 cup sugar

1/4 c. melted butter

Mix grated orange rind with sugar. roll each piece of dough into a 9" rope and tie in a loose knot. Roll knot in melted butter then sugar/orange rind mixture.
Place on greased cookie sheet, cover and let raise until double. Bake at 350
degrees for 15-20 minutes. Frost with citrus glaze below:

Citrus Glaze

1 cup powdered sugar
1 Tablespoon melted butter
3 Tablespoons orange juice
left over sugar/orange rind mixture

beat until smooth.

Tasty Tuesday Spinach Dip!

Any one know when the Super Bowl is. . .
Well, let me tell you,
Feb. 6th

Time to start thinking about your snacks,
I will be making this
 Yummy dip!




Spinach Dip

Ingredients:

1 (10 oz) package of frozen chopped spinach, cooked and well drained

1 (8 oz) can of water chestnuts, drained and chopped

1 cup mayonnaise

1 cup sour cream

1 package Knorr's vegetable soup mix

2 to 4 green onions, chopped

Mix and chill
Serve with carrot sticks, chips, or crackers

Made this tonight and it was a HUGE hit! I will be adding this one to my fav's list :)
ps. i was even told that my dip was the best dish of the night {went to a party with finger foods}. Yes, it is that good!
Served it with dip crackers, but people were diggin' in with carrots, celery and anything/everything they could get there hands on...ha!

Tasty Tuesday! corn flake cookies

                                  This cute boy is my grandson and he is allergic to peanuts.
so we have to be really careful
about what we make,
and what we buy.
Every package has to be read to see if there are peanuts in it, or if it has been processed on a machine that has used peanuts.
It cuts out a lot of treats,
including these easy, quick, yummy cookies.

However,
they are still a family favorite!

They have just been buried in the archive for a while.

Ingredients:


1 Cup Sugar


1 Cup Corn Syrup


1 Cup Peanut Butter


6 + cups corn flakes






Heat sugar and corn syrup over low heat until sugar is dissolved. Take off heat and add peanut butter to pan. Pour mixture over corn flakes and stir. Add more cornflakes to desired consistency. Place balls or spoonfuls on wax paper. Let cool and ENJOY!!!

Sammy's Dip
Sammy is my daughter Paige's friend.
Thanks Sammy, this dip is a new family favorite!



Ingredients:

1 yellow pepper chopped

1 orange pepper chopped

1 red pepper chopped

1 can black beans

1 can corn or hominy (whichever you prefer or both)

Cilantro chopped

Green Onions chopped

1/2 bottle of Hendrickson's Italian dressing/marinade-add more to taste.


Mix ingredients together and serve with tortilla chips

Delish and for the New Year - Healthy!

Tasty Tuesday!


ROLO COOKIES

1 chocolate cake mix, mixed with 2 eggs and 1/2 cup oil. Form dough into small balls around a rollo. Bake at 350. 8-10 minutes.
*I bought 4 packs of rollos and that was perfect!


So So Yummy!

Word of advice - buy an extra rolo!
It is hard not to eat them all,
before
you make the
cookies!
